My Banana muffins

Here, I have written something quite unusual ... in meanwhile posting of my new paintings ;-)..

I don't especially like cooking but I have a recipe which I am very proud and I success every time, I decided to share it with you all ! ... My Banana muffins recipe  ... healthy in addition!
This is a recipe I've been doing for over 10 years for almost weekly ... with some variations of fruits once in a while!

Almost no sugar, because I am intolerant to sugar, I needed a recipe with no added sugar. I have created a custom one ... I never measure quantities but, I had to force myself a bit to write it !..
I hope you will enjoy them ..

Ingredients

3-5 mashed ripe bananas
1/2 cup margarine
1 tablespoon of sugar (optional)
3 eggs
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup all-purpose white flour or baking flour
1/2 cup whole wheat flour
1/2 cup oatmeal
2 / 3 cup frozen berries (blueberries, raspberries, blackberries)

(Variations : cranberries and blueberries, cranberries and nuts, strawberries and raspberries, apples and nuts finely chopped, pineapple ...or any other fruits according to your mood!)

Preparation

Beat together margarine, sugar and eggs ... with a spoon or a whisk (...or even with a blender if you prefer)


Add baking powder, soda and salt, mix well. (I know ... in theory I should incorporate them with the dry ingredients but my muffins are most succeeded when I do it in this way, I guess they are better blended! ...)

Very ripe bananas ... the more they are black, more the muffins are sweet.

Mash the bananas ...

Pour the mashed bananas to the first mixture, mix well. ( I had 6 small ripe bananas so I used them all ... I could have made two recipes but I felt lazy... )

After this, add the rest of the dry ingredients, flour and oatmeal. The preparation should not be too liquid, if so, add more oatmeal or more flour.

I add berries at the end, taking care to turn them with a spatula in the mixture, just enough so they do not break up... if not, your mixture will be blue or green due to the blueberries !



Preheat oven to 350F (177C)

Pour the mixture into muffin tins and bake 38 minutes.

The time can vary from 35 to 40 minutes depending on your stove.
Gives 12 muffins.

Here you go ... To enjoy with margarine, without margarine, with black chocolate ... or just like you love to eat them !
